Cosautlán, named from the Nahuatl term meaning "Place of Gold," stands out as a premier coffee-growing community in Veracruz, renowned for being one of the region's earliest coffee cultivation areas. Its unique, flatter landscape distinguishes it from most coffee-producing regions in Veracruz, enabling slightly larger farms that typically span 3 to 5 hectares.

While Cosautlán may have a gentler terrain, its distance from urban centers brings both significant advantages and challenges. The pristine forests that envelop the area offer a healthy ecosystem, essential for sustainable coffee cultivation. Yet, this remoteness also means residents face limitations in accessing vital services, such as quality healthcare and diverse employment opportunities. As a result, the community embraces agriculture as its lifeblood, with a strong focus on cultivating high-quality coffee and lemons.

During the harvest season, the dedication of Cosautlán's producers shines through as they engage family members in all aspects of their work. Notably, they cultivate coffee under the protective canopies of native shade trees like banana and ice cream bean trees, promoting biodiversity and enhancing the quality of their coffee.

Harvesting in cherry form is a hallmark of Cosautlán's coffee, with producers employing mules, trucks, or ATVs to transport their crop. The journey to the central collection center varies between 15 minutes and 1 hour, ensuring freshness and quality.

At the central processing plant, the use of pure spring water for washing the coffee cherry reflects a commitment to excellence. After washing, the cherries are fermented for 48 hours in concrete tanks, followed by a meticulous mechanical drying process that lasts 60 hours. This careful attention to detail ensures that Cosautlán's coffee not only meets but exceeds the highest standards of quality, making it a true gem of Veracruz.
